Ayam Balado (Spicy Balado Chicken)

This recipe was given by one of my good friend here in Canberra, Bu Wito (Makasi Bu!) who is such an amazing cook! 

Balado is a type of sambal or sauce from Padang, Sumatera. This sauce can be cooked with so many different type of protein such as chicken, beef, fish or crab. Today we are making it with chicken thigh. Lets get cooking!

INGREDIENTS:
  • 1 kg of chicken – I am using chicken thigh, but you can use any type really but leave the skin on as this will give more flavor, trust me. Pour some lime juice and a sprinkle of salt to the chicken and set aside for now. 
  • 10 Shallot – Slice roughly
  • 4 Garlic – Sliced 
  • 5 Big red chillies – slice Julienne style
  • 5 Big green chillies – slice Julienne style
  • 1 Tomato – cut into 5 wedges 
  • 4 Kaffir lime leaves 
  • 1 Lemon grass – bruise the white bit by smashing it with the side of your knife or cleaver. This will bring out the aromatic fragrance from the lemongrass.
  • 1 Turmeric leaf (OPTIONAL- This is really hard to find)
  • 4 teaspoon of tamarind juice 
  • 2 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 8 Tablespoon of cooking oil (I use vegetable oil)
 
 
STEPS:
1. Heat up the cooking oil, and fry the chicken until half-cooked, set aside. 
2. Using the same oil from frying the chicken, cook the rest of the ingredients (except the tamarind juice) for about 5 minutes until aromatic. Do not forget to taste as you go, adjust the salt, pepper and sugar to your taste. 
3. Put the chicken back to the pan (medium heat), pour the tamarind juice and stir regularly until the chicken is cooked properly.
