Martabak Telur (Indonesian Pan Fried Crispy Pancake)

Martabak is a popular street food snack in Indonesia. You can almost find the martabak stalls in every corner of every street at night time. In my family in Bali, we often popped into a street stall on the way home to buy Martabak as an offering [rarapan] for the Gods when we pray. Martabak is our go to “rarapan” because it is so easy to find due to their popularity and it is so yummy!

INGREDIENTS:

  • 500 gram mince chicken
  • 5 spring onions stalks – chopped
  • 4 egg – whisk
  • 1 tablespoon of curry powder
  • 1 large onion – chopped
  • 3 garlic cloves – mince
  • 6 button mushroom – chopped into small pieces
  • 1 carrot – dice finely
  • 1 teaspoon salt (for the mince mixture)
  • 1 teaspoon pepper (for the mince mixture)
  • 1 tablespoon of sugar
  • 1 tablespoon of margarine or butter
  • 1/4 teaspoon of salt (for the eggs mixture)
  • 1/4 teaspoon of pepper (for the eggs mixture)
  • Cooking oil to fry the martabak
  • Spring roll wrapper – see below

STEPS:

  1. Turn on the stove on medium heat. Put the margarine into the pan. Add the mince, onion, garlic, carrot and curry powder. Stir well.
  2. Season well with salt, pepper and sugar. Cooked for 10 minutes, make sure the mince absorb all the flavor liquid.
  3. Taste taste taste.
  4. Add the button mushrooms and cook for another 2-3 minutes. Then set aside to cool down.
  5. Whisk the eggs, season with the 1/4 teaspoon of pepper and 1/4 salt.
  6. Add the spring onions into the eggs mixture and whisk together.
  7. After the meat mixture is cold, combine together with the eggs mixture.
  8. Pour one and a half tablespoon of the combined mixture into the spring roll wrap as shown below. Repeat.

9. Lastly, fry the martabak until golden brown. This is best served with acar (Indonesian pickles).
