Rawon Sapi (Indonesian Beef Black Soup)

Rawon is a traditional soup dish from East Java (Surabaya). When I used to live in Melbourne, my housemate’s mum always made this dish (she is from Surabaya of course) when she visiting. She ‘ll watch me eat this rawon (not in a creepy way) and constantly asked me “enak ga? enak ga? enak ya tambah lagi ya” (is it good? is it tasty? you want some more? here have some more) and then we will talk about food for hours. Ah the good old days.

I’ve always want to try to make this and I hope one day I could cook this dish for her and ask her enak ga enak ga.

 

INGREDIENTS:

  • 1 kg of beef chuck – diced
  • 1 liter of water
  • 3 kaffir lime leaves
  • 1 cm of galangal – bruised
  • 3 stalk of lemon grass – bruise and only use the white part
  • 1 spring onion (optional) just to add flavor

Food processor paste:

  • 10 Shallot
  • 4 Garlic
  • 1/2 teaspoon of pepper
  • 1/2 tablespoon of sugar
  • 1/2 teaspoon salt
  • 1 cm of ginger
  • 1/2 teaspoon turmeric
  • 2 big red chillies
  • 1 tablespoon of coriander powder
  • 5 candlenuts
  • 4 pieces of Kluwek  slice. This kluwek what gives rawon it’s distinctive taste. You can find this in Indonesian groceries store.
  • 50 ml of water

 

STEPS:

  1. Put the beef and 1 liter of water into the pressure cooker, seal the lid in medium heat for about 20 – 30 minutes.
  2. Wait until the steam off then open the lid  carefully.
  3. Get rid of all the excess fat from the beef that stuck around the pan.  The beef should be tender now.
  4. Pour all the blended ingredients into the pressure cooker, stir well.
  5. Add the rest of ingredients – Kaffir lime leaves, lemongrass, galangal and spring onion.
  6. Now leave the pressure cooker in low to medium heat (NO LID).
  7. Tasted the soup, and season as you go. This is a very important step, as my taste buds may be different to yours.
  8. After 20-30 minutes, the soup should be ready.
  9. Served with rice, salted egg (optional), and sprinkle some fried shallot on top.
